I love getting my recipe books out on a Saturday night and doing a little bit of baking. There’s nothing nicer than the smell of home baking wafting through the house and I usually make a dessert for Sunday lunch if we are having family or friends round. Hubby is in charge of the Sunday roast and I’m the pastry chef!  I usually make a pavlova or cheesecake but my little 3 year old grandson is obsessed with chocolate cake so I decided to make one for him using a recipe from my vintage cakes book, which has the prettiest floral cover!!

The recipe is called Simple Chocolate Cake and certainly lives up to its name as I’ve made it a few times and it’s very straightforward

imageRecipe-

230g soft butter

230g caster sugar

4 eggs

180g SR flour

50g cocoa powder

1 level teaspoon baking powder

Method-

Preheat oven to 180 degrees C

Put butter & sugar into large mixing bowl then cream them together with electric whisk until pale and fluffy. Add eggs one at a time beating well after each addition.

Measure out flour, cocoa & baking powder and sift into bowl. Fold in to mixture until ingredients are fully combined. ( I also added some grated chocolate into mix)

Divide mixture evenly between 2 round 20cm greased cake tins and bake in oven for 25 mins.

Leave to cool completely.

imageChocolate fudge icing –

100g milk choc

200g softened butter

400g icing sugar

4 tablespoons cocoa powder

2 tablespoons milk

Melt choc then whisk butter and icing sugar till smooth. Stir in cocoa & add melted choc & milk then mix again till smooth. (I added a bit more milk as was too thick)

Put in middle of two sponges then decorate rest of cake with frosting.

Serve with tea or coffee and perhaps a little cream on the side

    1. Thank you so much Jenny! Donegal was so lovely, glad you enjoyed the IG stories. It’s all about using the right nozzle when you’re piping to get the roses. I used the No8 star tube one xx
